Easy Oven-Baked Cheeseburger Sliders

Easy Oven-Baked Cheeseburger Sliders
2 pounds, 93% lean ground sirloin
1/4 cup seasoned bread crumbs
3/4 cup chopped onions
1/2 teaspoon salt
1 package (12-count) Kings Hawaiian Savory Butter rolls (or slider buns)
6 slices cheddar or Velveeta slices

Directions:

Heat oven to 400 degrees. In a bowl, combine beef, bread crumbs, onion, and salt. Gently press mixture into a 9-by-13-inch pan so that it makes one large patty of even thickness. Use the tines of a fork to poke holes throughout the meat. Bake for 30 minutes. As it bakes, the meat will shrink away from the sides and liquid will accumulate around the edges of pan. When fully cooked, remove the pan from oven (keep oven turned on) and carefully drain off the liquid.

Top the meat with an even layer of sliced cheese; return pan to oven for about 2 minutes or until the cheese melts. Remove from the oven and allow to rest for a few minutes. Cut into 2-inch squares (or the size of the buns used), making 12 mini- hamburgers. Serve with dill pickle slices and ketchup. Serves 6 at 2 sliders each.

I served it with pasta salad, pickles and chips. Quick and easy for sure!

chocolate twinkie cake

chocolate twinkie cake

 1 box cake mix
1 can frosting

filling:

5 tablespoons flour
1 cup milk
1/4 tsp salt
1 teaspoon vanilla
1 cup granulated sugar
1/2 cup shortening
1/2 cup margarine
1/2 tsp salt

bake cake according to package directions. when cake is completely cooled, turn cake out of pan onto a large plate or platter. (i usually use a cutting board). if the cake is really moist, put the cake in the freezer for a couple minutes and it should pop right out!

cut the thickness of the cake in half with a large knife or cake leveler. using a second plate, remove the top of the cake and set aside. flip the bottom half of the cake back into the cake pan. for this part, you can make the cake all fancy and do multiple layers if you want to. it's all about what you want :)

In a medium saucepan cook 5 T flour, 1 c milk, 1/4 tsp salt until thick. when i say thick, i mean kind of like a thin gravy. When it is too thick it doesn't beat up as nicely in the end. Remove from heat and add 1 tsp vanilla. Let cool completely. I usually put it in the refrigerator to cool while I do the next step.

In a medium bowl, cream together 1 c granulated sugar, 1/2 c crisco, 1/2 c margarine and 1/2 tsp salt.

When the "gravy" is cooled completely, add it to the bowl of creamed ingredients and beat for 10 minutes. It should be fluffy and the consistency of twinkie filling.

this recipe makes around 2 cups of fluff. It would be enough to have a 1/2 inch of filling in a 9x13 cake.

spread the cream filling on the bottom cake layer, leave 1/4 inch of space around the outside of the cake. the cream will spread out when the top layer is put back on.

carefully flip the top layer back onto the cake. frost as you normally would. if you are going to do a cake with multiple layers, i would recommend putting the cake in the freezer so the twinkie filling sets up and does not mix with the frosting if it squeezes out of the sides.

Bacon Ranch Potatoes

Bacon Ranch Potatoes
 What You'll Need
2 lbs red bliss potatoes, cut in chunks
2 tbs minced fresh chives or 1 tbs dehydrated
5 slices bacon, diced
1 1/2 cups cheddar cheese, shredded
2 green onions, chopped finely for garnish
1/4 cup buttermilk ranch dressing (the stuff in the bottle)
2 tbs Russian or Thousand Island Dressing
2 tbs sour cream

How to Make It
In a large bowl, combine the dressings, sour cream, chives, bacon, potatoes and 1/2 cup of the cheese.
Place potato mixture in prepared pan. Cover with aluminum foil and bake for 60 minutes.
Remove foil and stir. Turn oven temperature to 400 degree F. Return pan to the oven and bake for 15 minutes. Sprinkle remaining 1 cup of cheese over the potatoes. Bake for an additional 5-10 minutes or until cheese is melted and bubbly.
Remove from oven and garnish with green onion.
Makes 6-8 servings. Nutrition info will be based on 8 side dish portions (no matter what, it's calorie and fat packed--which is why it's so goooooood).
*About the pan size--if you want crispier potatoes, use the 13 x 9 pan. If you want softer potatoes, use an 11 x 7 or as I did an 8 x 8 deep square baker. Bake times are the same for all pans. Cook times are for a conventional oven. A halogen oven would cook in half the time

Jalapeno Popper Wontons

Jalapeno Popper Wontons
( I just look for the lowest carb wontons wrappers)
1 package refrigerated square wonton wrappers
1 8-ounce package cream cheese, softened
3 jalapenos, seeds and ribs removed, finely chopped
1/2 cup shredded cheddar cheese
Vegetable oil for frying
Coarse salt

1. In a bowl, combine cream cheese, jalapenos, and cheddar cheese. Arrange wontons in a single layer on a baking sheet.

2. Add 1 teaspoon of the filling to the center of each wonton (don't overfill them). Dip your fingers in a bowl of water and run your wet fingers around all edges of each wonton. Fold the wontons over the filling, pinching the edges to seal to make a triangle and removing any air bubbles.

3. Fry wontons in batches in hot oil until browned and cripsy. Drain on paper towels and sprinkle with coarse salt. Serve warm.
